Egg, Kale, and Tomato Breakfast Wraps

Sometimes we're too busy rushing out the door in the morning to eat a wholesome meal. Hopefully you get a chance to grab a smoothie or tea on your way to work or school, but on the days your stomach really needs filling, these are perfect!




I would make a friendly suggestion to choose USDA Certified Humane Eggs, but if you want to scratch the eggs altogether, firm tofu is a GREAT Alternative! Simply wrap the tofu you want to use in a towel and place it underneath a heavy pan for at least an hour. This will help the tofu drain out excess water, which will allow it to absorb other spices very easily!

Cut your tofu into blocks and sauté over medium to high heat with a couple tablespoons of turmeric, and voila! Scrambled eggs!. …er…tofu. Its scrumptious and packs an extra punch of protein (with no added cholesterol like its fragile counterpart). Combined with kale, tomato, and hummus, this breakfast is a complete meal and has all the right ingredients to get you energized for your whole day!



Ingredients: 

5 large kale leaves

2 tablespoons extra-virgin olive oil

1 1/4 cups grape tomatoes, halved

1 large shallot, chopped

2 garlic cloves, chopped

1 teaspoon chopped fresh thyme

1/8 teaspoon crushed red pepper flakes (optional)

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

1/4 cup chopped fresh basil leaves

4 large eggs, at room temperature

4 (10-inch) whole-wheat tortillas

1/4 cup store-bought plain hummus
